Pomegranate pumpkin waffles topped with fresh berries (They were so good, we skipped the syrup)

Ingredients:

1/2 cup gluten free flour
1/3 cup oat flour 
1/4 cup pomegranate powder*
1 tsp cinnamon 
1 tsp baking powder
1/4 tsp salt 
1/2 cup pumpkin purée 
1/2 cup almond milk
1 large egg, beaten
2 tbs honey 
1 tsp vanilla extract


Combine all dry ingredients in one bowl.  
Combine all wet ingredients in another bowl. 
Finally, combine all ingredients together. 

Spray or grease waffle maker with coconut oil.  Follow your waffle maker’s instructions. 

*The pomegranate powder is optional in making the waffles, but it does add an incredible flavor to them.  Find it on amazon or at Whole Foods. 

Yields 5 waffles.
