Greek style shrimp quesadillas .. Seriously our new favorite lunch.
1/2 cup cherry tomatoes, diced
1/2 cup cucumber, diced
1/3 cup small red onion, sliced thin
1/3 cup feta cheese, chopped
1/4 cup kalamata olives, chopped
1.5 tbs olive oil
1 tsp red wine vinegar
1 tsp dried oregano
16 large wild shrimp
6 whole wheat tortillas
In a large bowl, combine the first 8 ingredients and set aside.
Boil the shrimp (with shells) in a medium pot, until opaque ..a few minutes. Remove from heat and submerge in cold water. Remove shells & veins, chop the shrimp up and add them to the salad mixture and toss.
Heat the tortilla in a non stick pan, on medium heat, until warm on both sides. Add the shrimp salad to one side of the circle (so 50% is covered) of the tortilla. Fold over the tortilla and press down with spatula, warm through. Remove from pan, cut in half and serve.
Yields 4-6 servings.
